gardening

Well today the kids are planting more onions. They are also planting peas and some flowers. They are going to learn to grow their own food and preserve it. We have more things to plant but were only doing a little at a time that way we don't have to much of everything at once. And now that its spring were working on the house again. When the babies dad left we got given a small mobile home on family property. But it needed a lot of work at the time, it didn't even have water then. So we've came a long way and still have miles to go but its getting there. So happy gardening and home building to you all. :-)

OK those for those of you that didn't know I'm a feleon. My charge is over seven years old now and some of it was for drugs. Now I've been clean for almost 8 years but sometimes it still comes up for whatever reason. Well alot of felons assume the only jobs out there are flipping burgers, which there is nothing wrong with, but its hard to support a family on that kind of money. I think that's what leads some of us to going back to prison reverting back to old ways to get paid. If there was more information on better paying jobs for us this wouldn't be such a problem so I looked up some for all of us.

So tonight we had such a simple easy dinner, but it went over so well with the kids, the neighbor and my dad.  So it's definitely a keeper.

 Swiss steak

1 Family pack cube steak
1 can diced tomatoes
1 can progesso fire roasted tomato meal starters
Salt, pepper, and Italian seasoning to taste

Put it all in a crock pot, on high for 4 hours or until meat is all done. Then enjoy. :-)

Mozzarella Cheese Sticks

16 string cheese sticks
1/2 cup flour

1/2 tsp. Emeril’s Essence
2 eggs

1/4 cup milk

1 1/2 cups panko crumbs
1 Tbsp. dried parsley
Salt and pepper to taste
Canola oil for frying

Dipping sauce
19 oz. can tomato sauce
2 cloves of garlic, minced
1 Tbsp. olive oil
1/2 tsp. crushed red pepper or to taste
1 tsp. Italian seasoning
salt and pepper to taste
Emeril’s Essence
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Mix all ingredients together for Emeril’s spice. You will think of a million things to put it into.
Unwrap cheese sticks and cut them in half. Using three bowls for dipping, place the flour and Emeril’s Essence in the first bowl. Beat the eggs with the milk in the second bowl and then in the third bowl add the panko crumbs, parsley and salt and pepper to taste. Now start to dip the cheese sticks. First in the flour, then egg and finally panko. Place them on a cookie sheet and freeze for 20-30 min. I think I may keep some of these in the freezer. Great appetizer for kids and adults alike. Meanwhile heat the olive oil in a small sauce pan and add the garlic and saute for 1 min. Add the tomato sauce, red pepper, Italian seasoning, salt and pepper to taste. Simmer 15 min. Heat a few inches of the canola oil in a wok or large deep frying pan. Place sticks in the oil and fry to golden brown. Do not overcrowd the pan. Fry them in batches. Drain on a paper towel lined plate. Serve with the tomato sauce immediately.
